There are many versions of charbroiled oysters and Black's makes a good one. Some restaurants use fresh garlic and Parmesan while others use blue cheese and vinegar. Black's version utilizes a shot of Worcestershire sauce and lemon. This is a very simple dish well worth trying at your next dinner party, especially since oysters are back in season. You will need someone who is handy with shucking oysters.

1 dozen oysters, shucked and on the half-shell

1/2 cup chopped parsley leaves
1/2 cup chopped green onions
Salt
Black pepper
3 lemons, juiced
1/2 pound smoked center-cut bacon

Place oysters on a large tray. Season oysters evenly with salt, pepper, and lemon juice. Top each shell with equal amounts of parsley and green onions.

10 tablespoons softened unsalted butter
2 tablespoons finely grated Parmigiano-Reggiano
2 tablespoons minced parsley leaves
1 tablespoon lemon juice
2 teaspoons minced garlic
1 teaspoon minced fresh chives
1/2 teaspoon hot sauce, optional
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
24 shucked oysters, half of each shell reserved and washed
