Paula Dean\'s Cajun Seafood BallsIngredients:

* 1/2 lb cooked, cleaned, and peeled shrimp
* 1 (6-ounce) can crab meat (can use imitation crab meat)
* 1 (6-ounce) can salmon fish
* 1 (7-ounce) can whole corn kernels, drained
* 1 cup cooked white rice, leftover is fine
* 1/4 cup dried breadcrumbs
* 2 eggs, beaten, separate
* 1 tablespoon Cajun spice mix
* 1/2 cup prepared Tartar sauce
* 1 tablespoon grainy mustard
* 2 tablespoon dried parsley flakes
* Salt and freshly ground black pepper
* Peanut oil for frying

Paula Dean\'s Cheesy Shrimp on Grits Toast

This quick and easy dish by Paula Dean is great as an appetizer or for a brunch. It’s perfect for stand-up events, as it makes for the easiest finger appetizers.

Ingredients:

* 3 (14-ounce) cans chicken broth
* 1 1/3 cup quick-cooking grits
* 1/2 cup grated Parmesan cheese
* 1/2 teaspoon salt
* 2 tablespoon butter, melted
* 1 8 ounce package cream cheese, softened
* 1 tablespoon half-and-half
* 1/2 cup grated Italian cheese blend
* 1 teaspoon chopped parsley
* 1/2 lb cooked, peeled, and deveined shrimp, chopped
* 1/2 cup grated cheddar cheese

Directions:

Preheat oven to 400 degrees. Bring broth to a boil in a large saucepan. Stir in grits, and return to a boil. Cover, reduce heat, and simmer 5 minutes, or until grits are thickened, stirring occasionally. Stir in cheese and salt. Remove from heat. Spoon grits into a greased 9×13-inch baking pan. Cover, and chill at least 2 hours, or until firm. Un-mold grits onto a large cutting board. Cut out 48 (1 1/2-inch) circles using a round or fluted cookie cutter. Brush a large jellyroll pan with melted butter. Place grits rounds on pan. Bake for 15 minutes. Turn grits, and bake 45 minutes more. Set aside. (Up to this point, the recipe can be prepared ahead. If preparing early, cover and refrigerate grit rounds until you are ready to top with shrimp mixture.)

In a large bowl, combine cream cheese and half-and-half, stirring until combined. Stir in cheese, parsley, and shrimp. Top each grits round evenly with shrimp mixture. Top mixture with grated cheddar cheese. Broil 5 minutes, or until lightly browned and heated through.

Yield: 48 rounds

The Borsin cheese, crab meat and mushrooms go together perfectly in this crab meat appetizer recipe, with the phyllo pastry pulling it all together.

Ingredients:

* 1/2 cup Borsin Cheese
* 1/2 cup finely minced imitation crab meat (may use fresh if available)
* 18 uniform sized mushrooms, stem removed
* 1 box of phyllo pastry (will need at least 18 sheets)
* 1/3 cup butter, melted
* salt and freshly ground pepper
* 1 egg, beaten

Directions:

Preheat oven to 400 degrees. Combine crab and cheese and divide among the upside-down mushroom caps. Brush 8 phyllo sheets individually with melted butter. Cover with remaining sheets. Brush with melted butter again. Cut phyllo sheets into 6 squares. Place a mushroom, cheese side up in the center of each square. Season with salt and pepper. Lift sides of pastry over mushrooms to resemble small bundles and form a “neck” pinching edges together to seal. Place on a greased baking sheet and brush with beaten egg. Bake for about 15 minutes until pastry is crisp and golden. Serve hot.
