Baked Shrimp Scampi Recipe

Anyone who is following this blog knows that once I like a dish, I find lots of recipes for that dish.  One of my favorites is shrimp scampi- I just love how simple it is but how you can put your own twist on it.

Below is an good shrimp scampi recipe that you can bake in the oven.  It's an easy version of this classic with the wonderful 'zip' of Dijon-style mustard.

PREP TIME 30 Min
COOK TIME 15 Min

INGREDIENTS
1 cup butter
2 tablespoons prepared Dijon-style mustard
1 tablespoon fresh lemon juice
1 tablespoon chopped garlic
1 tablespoon chopped fresh parsley
2 pounds medium raw shrimp, shelled, deveined, with tails attached

DIRECTIONS

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic, and parsley. When the butter melts completely, remove from heat.
  3. Arrange shrimp in a shallow baking dish. Pour the butter mixture over the shrimp.
  4. Bake in preheated oven for 12 to 15 minutes or until the shrimp are pink and opaque

Thanks for this recipe, I am going to try it in the very near future… I too love Shrimp scampi, but the one time I tried making it at home it just didn't turn out at all like I wanted it to, so I've not tried again… but this recipe looks simple enough that I think I'll try again!
