The 73rd annual Louisiana Shrimp & Petroleum Festival will be held Labor Day Weekend, August 28 – September 1, 2008, in picturesque downtown Morgan City, Louisiana. This is an event that will prove that oil and water really do mix. Deep in the heart of Cajun Country, every Labor Day Weekend, tens of thousands of people celebrate at Louisiana's oldest chartered harvest festival.

Found this great "'make a day before" recipe for a cold crawfish dip! Very rich and great for parties or get togethers as it makes a lot. Serve on crackers.
INGREDIENTS:
1/2 cup butter
2 pounds crawfish tails, with fat (you may wish to chop up crawfish tails for smoother consistency)
4 (8 ounce) packages cream cheese, room temperature
1 bunch green onions, chopped
