Delicious Deviled Egg Recipes from Paula Dean

This is a simple recipe for traditional southern deviled eggs straight from Paula Dean.

Ingredients:
7 large eggs, hard boiled and peeled
1/4 cup mayonnaise
1 1/2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
Salt and pepper, for taste
Paprika, for garnishing
Sweet gherkin pickles sliced, for garnishing
Pimentos, for garnishing

Directions:

  1. Halve 7 eggs lengthwise. Remove yolks and place in a small bowl.
  2. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper, to taste.
  3. Fill egg whites evenly with yolk mixture. Garnish with paprika, pickles, and pimentos. Store covered in refrigerator.

When I made the develed eggs to take to a Sunday School Christmas party the split peas stuck to the eggs. I even dryed the eggs before I filled them and put them on the peas how do you keep the peas from sticking to the eggs?

Recently I was watching the TV show and the guest was a caterer from South Carolina I believe. The receipes were for hor doreuves and they were shrimp on toasted bread, fried oysters in spoons, asparagus quiche and a dessert. I can't find those recipes on the web page. Can you tell me where I can find them.

Paula, this is a mouthwatering dish. Looking at the pic itself is driving my appetite. I was planning to cook for my family for quite some time. I am sure they would be surprised If I make my first dish a Deviled Egg Recipe. Thanks for this apprehensive recipe. It also seems to be quite easy to prepare. I will surely let you know how it went.
