yummy….be creative…how about some steamed asparagus, veggie pasta (the multi colored kind) a rice pilaf, defiantly some type of bread a nice garlic bread or rolls. Top the meal off with a nice dessert like parfaits or bananas foster. YUM YUM this made me hungry. LOL what time is dinner ??? Good luck
A good side dish to go with Shrimp Scampi would be a nice Rice Pilaf. This matches very nicely. A good sidedish that wouldn't take away from scampi is french bread. Offer toasted and untoasted because some people don't like either. Also offer some with garlic butter and some without, for the same reason =\. Basically, some sort of grain like white rice, rice pilaf, or a light pasta, nothing too powerful.
I'd serve a small portion of risotto (about 50 gr per person), then the scampi (in a separate dish), and then - because scampi may be quite salty, to 'clean' our mouth I'd serve a combination of different vegetables, either grilled or stuffed & broiled or raw…. a couple of ideas: fennels sliced very thinly (you can use your food processor or a mandoline), green pepper and carrot, all placed in a plate in a sort of multi-colour arrangement - make sure to put a bottle of oil on the table so that everybody can season it if they want… or grilled zucchini, onions and pepper seasoned with oil, salt and thyme…
Rice or pasta would both be good but have you ever tried orzo ? It's pasta that looks like rice. Sometimes if I can't decide between rice or pasta that's what I make!

Wild rice and garlic bread, and a white wine. A nice Ceasar salad with balsamic vinegarette, maybe.

A nice tossed salad and baked potato. Or a green vegetable like brocolli or asparagus, in place of the salad.
