this is for boiling the eggs:

Place the raw egg in a saucepan.

Run cold water into the saucepan until the water is 1 inch above the egg.

Place the saucepan on a stove and cook over medium heat until the water begins to boil.

Reduce the heat to low.

Simmer for 2 to 3 minutes for soft-boiled eggs or 10 to 15 minutes for hard-boiled eggs.

Remove the egg with a spoon or ladle and let it cool slowly, or run cold water over it to cool it more quickly.

Deviled Eggs

6 hard-cooked eggs
1 teaspoon vinegar
sweet paprika
1/4 cup mayonnaise
salt
fresh parsley
1 teaspoon prepared mustard
black pepper

Halve hard-cooked eggs lengthwise (see above) and remove the yolks.

Place yolks in a bowl and mash with a fork.

Add mayonnaise, mustard and vinegar. Mix well.

Season with salt and pepper.

Stuff egg white halves with yolk mixture, dividing yolk mixture evenly among the eggs.

Garnish with paprika or parsley.

*Include more mustard or a couple of shots of Tabasco for more kick. You can also add chopped sweet pickles or cornichons.

**If you are adverse to the "bad" fat in mayonnaise, you can substitute lo-fat salad dressing (like Ranch, and Blue Cheese is a nice tangy touch). Or, just use more mustard – spicy brown makes great devils! One key ingredient for me: lots of celery seed – a great balance with the mustard and egg taste.

To hard-boil eggs, put them in a saucepan and add enough water to cover the eggs. Bring the water to a boil, then cover the pan and let it sit for 15 minutes. After that, take the eggs out and put them into a bowl of cold water.

I don't make deviled eggs because they're not very healthy to eat…but here's a recipe that sounds good

To make them pretty, put the yolk mixture in a piping bag fitted with a large star tip, and ****** it into the egg halves, making a puff (almost like frosting).

bring them to a boil in cold water….once boiling…turn off the heat and set a timer to 15 mins……once the timer beeps….set eggs in cold water…then refrigerate….after 30-40 mins you can use for whatever deviled eggs you may have….

according to Julia Child, this is how to boil eggs and they turn out perfect every time.
put eggs in a pan, add a teaspoon of salt and cover with water. Put on to boil. When the water is at a full rolling boil, remove from heat and cover. After 10 minutes, drain and cover with cold water to cool. They will be perfectly boiled, no dark green ring around the outer edge of the yolk.
I cut my peeled eggs length wise and put the yolks in a small bowl. I add a bit of whole grain mustard and Miracle whip salad dressing and pepper to taste. mash and mix thoroughly. spoon yolk mixture back into egg whites and sprinkle with paprika or thin sliced scallions. mmmmm good!

bring to a boil, let simmer in hot water,crack eggs open, mash add salt pepper mayo, and seasoning[knorrs] makes
great powdered dry packet mix-with i beleive cayeanne pepper &garlic powder
mustard powder]——i boil my eggs high for 10 straight minutes
and lower & just get them out of the water in about 15 minutes
cut egg [shells] in 1/2——scoop eggs out and place in bowl with
mix above…….then i have all those nice white half's that i fill
with the egg mix and place in fridge, & top off with paprica

I always had trouble getting the shell off of my hard boiled eggs to make deviled eggs. My ex mother in law finally told me her secret to success.
Hard boil the eggs in a saucepan of water for 10-12 minutes. (Eggs should be covered with water.)
Immediately drain the water from the pan and pour cold water into pan. Add ice cubes to the pan and let the eggs cool in the ice water for about 5-10 minutes.
Drain and refrigerate until ready to use. (I usually let them refrigerate over night.)
The egg shell peels right off with this method.
