Your favorite blackening spices?
Reens asked:
I'm a bachelor so I'm not going to go out and get all the spices required to make this myself (just for this), so I'm looking for something I can just buy that's already prepared. I have had a taste to make blackened chicken or fish for a while now, just never got around to doing it.
Any suggestions would be great.

Paul Prudhomme make some good ones different blends for chicken, fish etc.
Of course I'm going to tell you that I make the best.
My blacken, unlike most of the "supermarket" brands contains neither salt nor sugar.
It's for sale at along with a bunch of recipes making use of the product.

Another suggestion would be to check with your fish section at the supermarket. Some are already seasoned such as cajun fish. They will also have mixes for you.
My husband LOVES the fish market's cajun catfish. I put it in a preheated large frying pan until it fork flakes…about 20 minutes.
