FUNNEL CAKES
1 1/4 c. all-purpose flour
2 tbsp. sugar
1 tsp. soda
3/4 tsp. baking powder
1/4 tsp. salt
1 egg
3/4 c. milk
Vegetable oil
2 tsp. powdered sugar
Syrup
Combine dry ingredients. Add egg and milk, beating until smooth.
Heat 1/4 inch oil to 375 degrees in a skillet. Cover bottom opening of funnel with finger (funnel with an opening of at least 3/8 inch works best).
Pour 1/4 cup batter into funnel. Hold funnel over center of skillet. Remove finger from funnel end to release batter into hot oil; move funnel in a slow circular motion to form a spiral or other designs.
For 2 minutes or until golden brown, turning once. Drain on paper towels. Sprinkle with powdered sugar; serve hot with syrup. Makes 6.
FUNNEL CAKES FOR A CROWD:
6 eggs
1 qt. milk
7 c. flour
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. baking soda
1 lg. dash of salt
2 tsp. vanilla
Blend all ingredients until there are no lumps. In large metal or cast iron fry pan, pour batter into a funnel and dribble around. Turn over. Put powdered sugar on top.
Well, even I have never tried that one. If you have enough boxes of the beignet mix, just take one and mix it according to directions. Then what I would do is add milk and water to thin it. Also toss in a extra teaspoon vanilla. Once thinned enough cook as you would a funnel cake. You will never know until you try, so I say give it a try.
