Making beignets recipe- alternatives for canola and corn oil?

I would think you could use the vegetable oil for both the frying and in the recipe for the dough. Definitely not the olive oil - it will change the flavor.
Instead of a sifter, try whisking all of those dry ingredients together - this will break up any lumps, and aerate the ingredients, which is the purpose of sifting. Also if you have a colander with fine holes, you could try using that.
To sift the flour, use a small sieve. Just dump in the flour, hold the sieve over a bowl or large piece of wax paper, and tap the side with a wooden spoon or your hand.
Canola oil is vegetable oil I think, so you can use that.
Don't use the olive oil - it's flavor is too powerful, and you'll end up with a sort of savory beignet…which isn't necessarily a bad thing, especially if you cut back on the sugar a bit, and added some herbs.
Vegetable oil is fine for frying them in. I wouldn't recommend using olive, it tends to have a slightly fruity flavor and makes it taste kinda weird.
As for the sifting. Do you have a mesh strainer of some sort? You can carefully sift it through that.

Your vegetable oil will be fine. Don't use olive oil.
Use any sort of mesh strainer to sift the dry ingredients. I don't own a flour sifter and don't want to. They can be a real pain to clean.
If you don't have a mesh strainer. Put the dry ingredients in a bowl and whisk them all together. Use a dinner fork to dig out any lumps of flour and baking powder. Crush the lumps with your fingers and drop them back in the bowl.
If your baking powder seems a bit lumpy when you measure it out. Just put it in the palm of your hand and crush the lumps before you add it to the flour.
Your vegetable oil will be fine. As far as no sifter, try using a whisk (or even a fork) to stir everything together.
I had beignets for the first time around Christmas when I went to Savannah. However many pastry type items are made the same way - so go ahead with the vegetable oil (which canola and corn oil are) and do your best without the sifter.

Vegatable oil works fine. You could use flaxseed oil maybe also.
