Definitions of boudin on the Web:

Hot, spicy pork mixed with onions, cooked rice, herbs, and stuffed in sausage casing.

A Cajun sausage with cook rice mixed into the stuffing.

a Cajun sausage.

(boo-dan) — Hot, spicy sausage that has pork, onions, rice, and herbs mixed together.

A delicate sausage.

(boo-dang). A delicate side dish prepared with forcemeat.

i think he ^ covered it all. these are delicious by the way, as a yankee i had never heard of them until i took a trip to SW louisiana a year ago. the taste made me almost forget how bad they must be for me :)

Very good cajun dish. I like the alot with saltine crackers and some Cajun Chef hot sauce.

ok most boudins in sw la are made with rice, beef, onions, chopped liver and seasonings stuffed into a synthetic edible casing…

now boudin balls on the other hand, is the inside of the boudin ya know meat rice etc rolled into a ball then rolled in a flour mix then deep fat fried… the best thing in the world!!

(not all boudin have the liver)

Boudin -
Smooth sausages of two types.

Boudin blanc contain veal, pork, and chicken.

Boudin noir are made with blood and rice or potatoes.

The latter type are popular in European and Creole cooking.
