i think he ^ covered it all. these are delicious by the way, as a yankee i had never heard of them until i took a trip to SW louisiana a year ago. the taste made me almost forget how bad they must be for me
ok most boudins in sw la are made with rice, beef, onions, chopped liver and seasonings stuffed into a synthetic edible casing…
now boudin balls on the other hand, is the inside of the boudin ya know meat rice etc rolled into a ball then rolled in a flour mix then deep fat fried… the best thing in the world!!

Very good cajun dish. I like the alot with saltine crackers and some Cajun Chef hot sauce.
