It's a flaming banana dessert first served at Brennan's in New Orleans, made with:
* 4 tablespoons butter (1/2 stick)
* 1 cup dark brown sugar
* 2 bananas
* 2 oz. banana liqueur
* 4 oz. dark rum
* Ground cinnamon
* Vanilla ice cream (optional)
If you've never been there, breakfast at Brennan's is a real treat.
Bananas Foster is a dessert made from bananas and vanilla ice cream, with the sauce made from butter, brown sugar, cinnamon, dark rum, and banana liqueur. The butter, sugar and bananas are cooked, and then the alcohol is added and ignited. The bananas and sauce are then served over the ice cream. Preparation of the dish is often made into a tableside performance.

In the 1950's, New Orleans was the major port of entry for bananas shipped from Central and South America. Owen Edward Brennan challenged his talented chef, Paul Blangé, to include bananas in a new culinary creation-Owen's way of promoting the imported fruit. Simultaneously, Holiday Magazine had asked Owen to provide a new recipe to appear in a feature article on Brennan's.
In 1951, Chef Paul created Bananas Foster. The scrumptious dessert was named for Richard Foster, who, as chairman, served with Owen on the New Orleans Crime Commission, a civic effort to clean up the French Quarter. Richard Foster, owner of the Foster Awning Company, was a frequent customer of and a very good friend of Owen.
Little did anyone realize that Bananas Foster would become an international favorite and is the most requested item on the restaurant's menu. Thirty-five thousand pounds of bananas are flamed each year at in the preparation of its world-famous dessert.
Ingredients: - 1/4 cup (1/2 stick) butter
- 1 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup banana liqueur
- 4 bananas, cut in half lengthwise, then halved
- 1/4 cup dark rum
- 4 scoops vanilla ice cream
Directions:
Combine the butter, sugar, and cinnamon in a flambé pan or skillet.
Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring, until the sugar dissolves.
Stir in the banana liqueur, then place the bananas in the pan.
When the banana sections soften and begin to brown, carefully add the rum.
Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum.
When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream.
Generously spoon warm sauce over the top of the ice cream and serve immediately.

babanas foster started as a flaming ice cream dessert, however you can now purchase a simpler version in the ice cream section of the grocery store…bye the way..it's delicious

recipe for bananas foster 4 firm bananas sliced lengthwise. 4tablespoons unsalted butter. 1/2 cup dark brown sugar. 1teaspoon ground cinnamon. 1/2 teaspoon nutmeg. 3tablespoons lemon juice about 1lemon. 1/2 cup dark rum or good quality brandy. preparation melt butter in heavy skillet add brown sugar and spices. stirring until the sugar and spices is completely melted and the ripe bananas and cooked until they are hot and coated with syrup. carefully pour the banana liqueur and rum.
BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.
